In a saucepan, heat 2 tbsp of oil. Add squash, tomatoes, garlic, ginger, lemongrass, and pepper. Cover and cook on low for 10 minutes. Add a little water if needed.
Remove from heat and blend until smooth. For an ultra-smooth texture, strain the sauce to remove fibrous bits from ginger and lemongrass. Stir in sugar, salt, and pepper. Keep warm.
Cut snapper into large pieces. Season with salt and pepper.
Heat the remaining oil in a skillet until very hot. Sear the fish skin-side down for 2–3 minutes. Flip and cook another 2 minutes.
Squeeze fresh lime juice over the fish and serve over warm squash sauce. Garnish with fresh herbs or fried garlic chips if desired.
