Cook the rotini pasta according to package instructions. Reserve some of the pasta cooking water before draining.
In a large saucepan, melt butter over low-medium heat. Add the rosemary sprig and let it sizzle for a couple of minutes, releasing its fragrant oils.
Slowly pour in the marinara sauce and bring to a boil.
Once boiling, add the Merlot wine and crushed red pepper. Reduce heat and simmer for 4-5 minutes, or until the sauce thickens slightly.
Drain the pasta and add it directly to the sauce. Toss to coat everything evenly.
If the sauce seems too thick, add a splash of the reserved pasta water to thin it out.
Cook for another 2-3 minutes, allowing the flavors to meld.
Remove from heat and serve immediately. Garnish with grated cheese or chopped scallions, if desired.
