0 In a saucepan, heat 2 tbsp of oil. Add squash, tomatoes, garlic, ginger, lemongrass, and pepper. Cover and cook on low for 10 minutes. Add a little water if needed. 1 Remove from heat and blend until smooth. For an ultra-smooth texture, strain the sauce to remove fibrous bits from ginger and lemongrass. Stir in sugar, salt, and pepper. Keep warm. 2 Cut snapper into large pieces. Season with salt and pepper. 3 Heat the remaining oil in a skillet until very hot. Sear the fish skin-side down for 2–3 minutes. Flip and cook another 2 minutes. 4 Squeeze fresh lime juice over the fish and serve over warm squash sauce.
