Grease a 9.25 x 5.25 x 2.75-inch loaf pan with baking spray; set aside. 1 In a medium bowl, whisk together brown sugar, granulated sugar, honey, browning, applesauce (or molasses), vanilla, melted butter, Guinness Stout, and egg. 2 In another bowl, combine flour, baking powder, salt, cinnamon, and the spice mix. Stir in dried fruits. 3 Add the wet ingredients to the dry ingredients and mix until just combined. Scrape down the sides of the bowl. 4 Pour the mixture into the prepared loaf pan. Top with cherries if desired. 5 Bake for 60–75 minutes or until a toothpick inserted into the center comes out clean. 6 Let cool before slicing.
